I purchase my olive oil from a small family operation, the Fattoria Petrini in San
Vito in the Italian region The Marches. The family Petrini has
been cultivating their valuable olive trees with controlled organic methods
for many years.
The best oil "Raggia di San Vito" is exclusively pressed with
hand-picked Raggia olives. This olive variety is pleasantly mild with a fine
hint of herbs and almonds and is considered to be the finest type of
olive. The Raggia olives can only be found in the March
region.
Did you know that "cold pressed" olive oils are actually alloweg
to be heated to up to 60°C and usually are? The term "cold pressed" only
indicates that no external heat may be applied. The rubbing of the industrial
presses, however, quickly produces temperatures up to 60°C.
During the pressing in their old stone mill, the Petrine family
makes certain that the 30°C point is not exceeded when
producing their top oil Raggi di San Vito. The result is an olive oil that
has won multiple prizes with its unbelievably fine flavour.
